My mother made the best birthday cakes: chocolate cake and chocolate frosting, decorated with mini marshmallows.
My family would gather round and sing “Happy Birthday,” but by the time the cake was served, the marshmallows were gone. Hmmm … where did they go?
Professionals were called in to investigate …
and it didn’t take long before the guilty party was found.
I was caught in the act. My sister was looking the other way so she wouldn’t be called in as a witness.
This was a childhood tradition that I had long forgotten since I became an adult and started taking birthdays waaayyyy too seriously! So with that in mind, I decided to make the ultimate marshmallow cake. No rule, no boundaries – just pure cake and marshmallow debauchery.
I call it, The Crazy Marshmallow Cookie Cake …
A plane yellow cake with chocolate frosting is decorated along the bottom with mallomars and mini marshmallows. The top has more marshmallows along with pinwheel cookies that serve as holders for the marshmallow pops dipped in chocolate. Completely ridiculous, and that’s the point. I challenge everyone to do something silly, and enjoy it as if you were a kid again. After all, why should kids have all the fun? Or all the marshmallows?
